Porfiria is another celebrated smallholder farmer (edging towards 90 years of age), now entirely superseded in the manual sense by her son Javier. They work traditional varietals of bourbon and Caturra. In Porfiria's long history of farming coffee were the first final buyers to purchase directly from her (which we have had done since 2017).

Interesting processing note: culturally, the folks in El Paraiso that we buy from (Ader Recinos, Jesus Constanza and sons Lazaro and Daniel) do an initial wash just before ferment finishes, then leave it overnight fully wash the next day. It has been found that this provides a homogeneous ferment and deliciousness in the cup.

Pricing Transparency:

    • We paid 1450 Quetzales per quintal (100 pounds of parchment) for Porfiria's coffee. At times throughout harvest, the local rate was around 650Q/quintal, this at a time where cost of production is 700-800Q/quintal.
