Ader is the third generation to manage the family farm that graces the mountains of the lovely hamlet of El Paraiso. The farm stretches from an altitude of approximately 1800 metres at the house to over 2000 metres at the top. 

With heritage varietals of caturra and bourbon (and smatterings of newly planted geisha and some Ethiopian varietals), healthy soils, best practices implemented in the field (such as with management of shade trees), coupled with Ader’s youth, motivation and independence, the whole arrangement was set for success from the beginning. We feel very lucky to have met Ader back in 2016 and to have become his first direct buyer back then. Prouder still to be working so happily with him (as well as many of his family and neighbours) six years on.

This lot was dry-fermented in a ceramic tile-lined tank for 24 hours, after which water is added, the tank stirred, and fermentation allowed to continue for another 12  hours. Ader then expertly and carefully dries on a concrete patio.

Roasted for espresso brewing.
