    5 times Cup Of Excellence placer Franco, with the help of a few hired pickers on the farm, carefully ensures that cherries are picked when they measure between 24 and 28 on a brixometer (borrowed from a neighbour who has one). Cherries are floated to sort out over- and under-ripes (and to even out the temperature on the cherries) and then hand-sorted on a custom made bench. (we witnessed Franco doing this legit and not- for-show when we visited the farm in 2022, and this despite his advanced years!) 

    The coffee is then depulped and left to ferment in a low oxygen environment- in sealed drums – and the pH is measured throughout the process to identify when it has reached the perfect point. It’s washed once, and then moved to a slanted patio space where it drips a bit more moisture out. From there, the coffee is moved to a shared and well ventilated parabolic dryer system where it spends about 25 days. 

  • Pricing Transparency: Franco was paid $2,700,000 pesos per carga (125kg of dry parchment coffee) in September 2023 for this micro-lot.
