Here’s a special treat from Huila!
Raul Diaz is our regenerative poster boy, he brews and ferments all of the nutrients and microbiology his trees need, and teaches younger members of the community how to be completely self-sustaining via his on-farm bio lab. He uses microbiology, earth worms, shade trees and nitrogen-fixing intercropping to improve soil and coffee cherry health. He has never needed any convincing to grow organically and is part of a growing producer-lead movement towards soil regeneration.
His Geisha is picked and then the fermentation process starts as whole cherries for 24hours. Raul then depulps, ferments the seeds with their mucilage in ceramic tanks for a further 24 hours before fully washing the coffee. The initial cherry ferment provides a depth of richness and sweetness not often seen in washed geishas. We love the vibrancy and intrinsic sweetness of this cup, a result of some soil amendments that were recommended by our extension agent in Colombia, fellow smallholder Frank Torres.
