This special micro lot yielded only 105kg and is our first release of Edilma’s fairly recently planted pink bourbon variety.
If you’ve been following for a while you’ll know of our love for Edilma, as a leader in her practices and her community as well as for her outstanding coffees.
Edilma is one several Colombian producers we have been working directly with since day dot (2015), and she’s certainly one of our most profoundly cherished. Given recent political events in Colombia that have left the country practically paralysed and in severe distress, we are even more grateful to be able to enjoy this coffee – it’s a December 2020 harvest, was exported in February and arrived into Australia in May. And it won’t be around for long!
In the cup you will firstly reap the benefit of sweetness derived from excellent cherry ripening and selection and you may also perceive subtle hints of a careful anaerobic fermentation that playfully weave both fresh and stewed fruit notes in alongside the variety’s trademark chocolatey and malty tones.
We describe this coffee as layered and sophisticated whilst still being approachable.
Roasted for filter brewing on 11th June and thereafter for one week (or until it sells out!)
