Nelson, along with his sisters Ana Yoheli and Lidia, works half of the family farm, having inherited a portion from his parents – Segundo Ismael and Edilma – who have farmed coffee all their lives.
Perfectly ripe cherries commence their fermentation in cherry, and 24 to 36 hours later are depulped to continue a two day dry fermentation, before being washed. After a pre-dry on raised shaded beds the coffee is brought up to his shade-cloth covered drying patio atop the family house.
Once thought to be a naturally occurring cross- pollination between red and yellow borbon varieties, DNA testing has recently demonstrated that the “pink bourbon” variety is in fact another Ethiopian Landrace. That’s right – coffee – keeping us on our toes!
Nelson is a member of Los Guacharos (pretty much our favourite producer group in Southern Huila) and is producing tastier coffee with every harvest over the last few years. This lot is from December 2023/January 2024. We paid Nelson $2,950,000 per carga (125kg parchment coffee) for this coffee, via our sourcing arm, Shared Source, which acts as a Colombian exporter and importer in the USA and Australia.
Roasted for espresso brewing.
