Jonathan Caicedo is a fresh-faced young gun from one of our favourite groups of producers – Los Guacharos – based in Bruselas in Southern Huila, Colombia.
He’s one of a new breed of producer who sees that by building a relationship with a committed buyer like Small Batch, he can create a worthy livelihood producing specialty coffee. The prices we pay are above the cost of production, and in addition, we have partnered with him in improving plant husbandry and soil care while reducing agrochemical input, meaning his long term sustainability is being worked on, while his bottom line also benefits.
As we pay in parchment form, in Colombian Pesos, Jonathan can confidently invest in quality processing knowing his income won’t change based on currency or market fluctuations. Jonathan is a mere 18 years old and is already a very accomplished and competent producer, overseeing 20,000 caturra trees on 5 hectares, and actively pursuing the best processing and cup quality.
After initially experimenting with a very long fermentation in cherry form and finding some negative outcomes, Jonathan has now settled on a safer 24 hours of fermentation in that form, plus a further 18 hours after depulping. This process amplifies the fruit while maintaining the sparkling acidity and cleanness of the coffee. He finishes this careful processing with slow, semi-shaded drying and careful cellaring on his farm while awaiting our purchase confirmation and delivery request. This preserves humidity to perfection, meaning the coffee arrives in Australia undiminished, and we can proudly offer it for your enjoyment.
